Dinner is ready!

Click HERE to see my periscope from last evening. Both Nick and I really enjoyed dinner.

The recipe is my own and included the following:

  • Eggplant
  • Fresh tomatoes
  • Onions
  • Green and orange pepper
  • Zucchini
  • Fresh garlic
  • Italian seasoning
  • Sea salt

I vary the amounts depending on what I have on hand and taste as I go.  This was served over baked spaghetti squash with a little bit of Parmesan.  You can google ratatouille and find many delicious recipes.

Another great healthy meal enjoyed!
